Olivar

With views overlooking the rocky dunes of Agafay, our restaurant Olivar is a place to come together in conversation, fuel our bodies for adventure and live new experiences in the name of food. Our menus invite us to explore rich and diverse flavors, offering unique dishes in which the timeless traditions of Moroccan cuisine mingle with the many cultures to have influenced the region, including the Berbers, Moors and a range of Middle Eastern and African countries.

Our Chef

Originally from Morocco, Chef Youssef Erraji Chahid began cooking alongside his family, whose passion for food inspired him to become a chef. After sixteen years of professional experience in the kitchen, Youssef co-founded a fine dining restaurant in Tulum, Mexico, where he worked to fuse Mexican, Moroccan and Mediterranean flavors. After his time abroad, he decided to move home and share his creative palate with our Habitas family.

Our Menus

Our flavorful dishes reflect traditional culinary techniques unique to Morocco while exploring the cultural diversity of the country’s history over time. Our relationships with neighboring farms allow us to prepare our meals with only the freshest seasonal ingredients, like citrus, grapes and dates. Our menus are sourced locally and seasonally and therefore subject to change.
