Our kitchen is authentic and rustic while refined, with techniques that highlight the power of plant-based cooking and honor the environment around us. Centered around our belief that food is medicine, our seasonal ingredients are hand-selected at local farms by our chefs, who work closely with farmers to tap into local knowledge and choose produce based on their health and wellness benefits. Our menu also features carefully-selected animal products from the region, such as Yucatecan pork and freshly caught seafood, which are prepared by honoring local recipes and techniques.
